At this point, everyone knows the most important part of the lyrics to the Cheers theme song. But why do I mention the lyrics here? Because the place in the lyrics is the place I would like to create, whether it is a bar, restaurant, or something I haven’t yet thought of.

This past weekend, the wife and I had friends over and we got talking about food/restaurants. The other couple began reminiscing about their favorite sushi restaurant somewhere in California. It was a small place, hidden away, no sign on the door, and possibly only 8 seats. The owner scolded people if they were eating incorrectly and then taught you how to do it correctly. This place was memorable, had character, and clearly was awesome. It sounds just like a restaurant I would like to own and operate.

This wasn’t the first time I have heard about an unforgettable restaurant and thought to myself, “that is what I want to create”. That if we could dine out every night without consequences, this particular restaurant would be the one we all would choose. Someplace that is special and makes extraordinary memories that people still talk about many years later with friends on the other side of the country.

Sure, I may not end up opening up a restaurant, quality of life and all, but whatever I do end up creating, I want it to be memorable. Food, from personal experience and as evidenced by the short clips from the 2015 National Geographic special, Story of Food, can provide so much pleasure for people, so much happiness, so much wonder. I want to be able to provide that food happiness for the general public. I want to help them make memories that will last a lifetime. I want to be that unique neighborhood place that lifts up an area/city and where everybody knows your name.

Food is everything. Food is life.
